The idea of farm to table dining is undeniably trendy, but what does it really mean? Greenbluff Fresh Catering embodies it at every event they cater, and they’re telling us just why that’s so important.
Tell us about what you’ve been doing recently?
These pictures were of the appetizer table at a wedding at the Bozarth mansion in August. All of those fruits were hand-picked by us from Greenbluff farms. There was spinach artichoke dip, baked brie with peach compote, honey Dijon chicken skewers, and blackberry BBQ sauce meatballs as well as the fruit, veg, and cheese trays. The honey, blackberries, peaches, herbs, and tomatoes we cooked with were also from Greenbluff!
Why do you source locally?
It is important to us to work with local farms because the quality of the fruits, vegetables, honey and eggs are far superior to commercial produce and we are helping keep small farmers in business. In an age where agro-tourism is taking over Greenbluff, I want to support the farms that actually farm, which have a tendency to be overshadowed by the tourist attractions of others. This is why for every wedding, I provide a placard at the beginning of each buffet that states which items came from Greenbluff and from which farms.
What are some of your most popular dishes?
People really loved the apple butter chicken this year as well as our pulled pork sandwiches which have a monthly rotating barbecue sauce. June is a strawberry BBQ sauce, July has a cherry BBQ sauce, and August’s is blackberry. Our creamy pesto salmon was a huge hit, which utilized fresh Greenbluff basil.

Do you do custom menus?
We do, and we love to! We have a wedding coming up where the bride’s family owns a farm and will be providing all the proteins. For their menu we will have fresh lamb and pork to make curried lamb, jerk pork, and a Jamaican style pork, with a smashed potato salad and cabbage and carrot slaw with our Greenbluff ingredients. We are happy to make custom menus as it keeps us creative.
